Sweets for a Party by Bunny

Bunny is off to a cocktail party on Wednesday and realizes at the last minute she needs a fabulous, fast, unforgettable sweet, much like herself, to share with everyone. What will she make?

Cookie Squares and Triangles from Cook. They go together in minutes and bake in 20. Just enough time to wrap up a few remaining gifts.

Bunny will be baking on Edmonton's CTV Morning Live Show Wednesday Dec.7. The morning host will be her sous chef and put the recipe Cookie Squares and Triangles from Cook by Deborah Anzinger P.H.Ec. together for her. 
 

Cookie Squares and Triangles

A recipe from Cook—You Can Cook Fast, Healthy Meals For Your Family

Deborah Anzinger Professional Home Economist

                                                                                               
Ingredients

11/2 cup butter, cut into small cubes
11/2 tsp salt
11/2 tsp vanilla
11/2 cup sugar

3 cups flour
11/2 cups chocolate chips or chocolate chunks
11/2 cups pecans, toasted and chopped ( optional)

Order of Events

  1. Cream butter, salt, vanilla and sugar

  1. Stir in flour, chocolate chips and nuts

  1. Press firmly into 17x12 inch jelly roll pan

  1. Bake in a 375 degree F preheated oven for 20-25 minutes until golden brown

  1. Cool cookies in pan on cooling rack for 5 minutes then slice into squares or triangles, cool another 10 minutes and  remove from pan

One Pan of Christmas Baking Away From A Holiday Meltdown

Adding one or two or ten events to our calendars during the holidays can send our already crazy busy lives into hyper drive. Leaving us stressed and unhappy.

Bunny Cleaver has lived the life, family, job, home, pets and deadlines. Bunny encourages us to Cook using simple, healthy ingredients. She encourages participation of your own personal sous chefs and she makes this work with lots of planning and delegating. But lets face it the holidays are exceptional in that we may be spread very, very thin.

If the thought of Holiday Baking is leaving you close to a holiday meltdown than do not do it. Repeat after me, I am not going to feel guilty, I am going to find a good baker and purchase my holiday goodies. Again, I will not feel guilty. I will sit with my family and loved ones and enjoy our time sharing delightfully easy bakery bought goodies.

Who is Bunny Cleaver?

Bunny Cleaver is a fast paced, busy gal who is constantly on the move. She adores a fabulous pair of shoes and a perfect shade of lipstick.  Bunny is in demand. She is a wife, mom, career gal, sister, friend, dog walker, house cleaner and chauffeur. She is also a planner, organizer and shopper who knows she also needs time for herself.

She is determined to eat fresh, healthy, flavorful food. She is also determined not to be the only one in the kitchen preparing meals. Bunny sees everyone in her house as her own personal sous chef. And, when friends and family come to visit sometimes they are sous chefs too!  She rises to making dinner and packing lunches for her family  but adores it when her family prepares food for her. So, she teaches her sous chefs how to cook. Bunny says, "kids and partners rise to responsibility and by cooking and preparing meals for each other they learn empathy and caring while gaining competence and confidence."

Pumpkins

The first published account of a Jack-o-lantern was 1837.

Remember Halloween nights carving out your pumpkin? First I was too young to use the knife. I had to satisfy myself with designing and watching as the carving brought my pumpkin to life. I was always allowed to reach my hand into the pumpkin cavity and pull out the loose pumpkin guts. My job was to separate the slimy bits from the seeds in preparation for roasting. We would roast the seeds low and slow with a little salt, pepper and curry. Yumm!

Pumpkin is described as a squash like fruit or a gourd like squash. The pumpkin is native to North America. Pumpkin is also referred to as a winter squash with a thick orange shell, creased from stem to bottom. It contains seeds and pulp. Pumpkins have male and female flowers on the same plant and are typically pollinated by bees.

Pumpkins contain lutein and alpha and beta carotene which generates vitamin A in the body. Pumpkin is very good for the digestive system.

Eat pumpkin boiled, baked, steamed and roasted. The seeds are very good; try topping pumpkin loaf with seeds. The oil is rich and robust and can be added as flavouring to other oils and dishes.

Ice Pops Await After a Hot Bike

 My legs are aching and my wrists hurt. My family and I biked up and down the ski hill in Kimberley BC.  OK we pushed up a bit, well maybe 2/3 but that ski hill is steep and the wild flowers needed to be admired which is hard when you are pumping up the hill and gasping for breath. The view at the top was beyond fantastic and the feeling of accomplishment was to die for. Before we left I made ice pops which I or one of my sous chefs have done every morning of our holidays. We are using amazing BC fruit, a little yogurt and juice. We make different combinations each day. My family and I enjoy arriving home to delicious cold ice pops after cycling, paddling, swimming and site seeing. Use approximately 2 handfuls of fruit to 1 cup each of yogurt and juice. Blend all together in a blender or food processor and pour into ice pop molds, paper cups work great. Find your favorites and mix it up.
